Chef Erwin Rarugal Unpacks the Global Comforts at Don Tomas Restaurant

Finding a distinct voice in a neighborhood celebrated for its deep culinary scene takes a clear, intuitive vision. At Don Tomas Restaurant inside Tribute Hotel, Group Executive Chef Erwin Rarugal looked directly to the travelers he has hosted over the years to shape the menu, bringing together a personal lineup of comforting Asian flavors.

Rather than confining the kitchen to a single region, Chef Erwin drew inspiration from the varied palates of returning international guests. The result is a welcoming dining room where familiar cravings across Asia comfortably share the table.

"I was inspired by returning guests from different places," Chef Erwin shares. "We wanted to offer a simple spot where people could find those well-loved dishes without having to search around."
Visitors can order Singaporean-style steamed chicken and fragrant nasi goreng alongside house pizzas, pasta, and salmon kimchi, making it an easy spot for groups with wide-ranging tastes. Mornings begin with a generous breakfast buffet featuring local hot staples, fresh greens, and seasonal fruits, before the kitchen transitions to an ala carte menu for lunch and dinner.
Among his top recommendations, Chef Erwin highlights the braised pork, a dish rooted in his past work with Filipino-Chinese kitchens. Another standout is his take on beef tendon, which blends the hearty soul of traditional beef pares with Chinese cooking methods and a distinct, glossy sauce.
When asked about picking a single signature dish, Chef Erwin admits it is no easy task. "It's like your kids—you can't really pick a favorite," he laughs. "Back in my previous kitchens, I concentrated heavily on Filipino-Chinese cuisine, so the braised pork is very close to my heart."
Dessert brings its own sweet surprises, courtesy of a close collaboration with the hotel’s pastry team. A clear favorite among early diners is the Ube Langka Mochi, a chewy, delicate bite that fuses Japanese texture with the familiar tropical sweetness of purple yam and jackfruit.
With plans already brewing to expand the menu and introduce a steakhouse at their Batangas property, Chef Erwin keeps the atmosphere at Don Tomas warm and personal.
"I'm not stopping here—there is always room to grow," Chef Erwin says. "The staff here are very happy and consider us family, so we really just want people to come, relax, and experience what we have built."
