The Buttercream Diva Who Packs Pastry Into Every Trip

Known among bakers as Chef Ave Bayle, has spent over a decade building a life that ties pastry instruction with the road. Based in Batangas and married for three decades, the IKAFCD-certified instructor opened her cake shop in 2013, one year after she began teaching baking classes. Her work in buttercream, the medium that earned her the title “The Buttercream Diva,” has taken her across the country and abroad.

She travels with her husband, whom she calls Red, on most of these trips. The couple shares portable careers, which means their work fits inside a suitcase, a piping bag set, and a folder of class outlines. In 2017, Chef Ave was invited for buttercream workshops in Dubai. She did not plan it. The opportunity arrived, and within days, the couple was on a plane, conducting classes for Filipino bakers in the Middle East. She has since returned for engagements in Abu Dhabi.

The Bayles travel for reasons that overlap more often than not. Most trips begin as work, with classroom materials packed into the car and a highway drive ahead, though an extra day often gets attached for an island detour or a heritage town visit. The quieter trips are the escape kind, the pause they take when routine starts pressing in too tightly.

Two wheels suit them when the load is light, though pastry tools usually push the couple toward four. With four children at home, family trips happen at least six times a year. Chef Ave and Red see these as a different sort of classroom, one that teaches their kids resourcefulness and street smarts, lessons she believes do not happen inside a school building.

The couple has built a small audience of fellow travelers and home bakers on Facebook, posting reels and short videos that capture both their workshops and their detours. Chef Ave does not keep a future travel list. She lets the calendar fill itself, the way 2017 filled itself with Dubai.
